Alabama BBQ has multiple styles, but the state boasts its own unique approach with "White Sauce". The is extremely popular in North Alabama and Big Bob Gibson created this sauce in 1925. White Sauce is mayo & vinegar based used liberally as a sauce, marinade, and dressing primarily for chicken. 

Eastern Alabama tends more toward Carolina style with an Orange colored BBQ sauce combining vinegar, mustard, and tomato. Pork is the most popular meat in this region.
